Cauliflower patties with quinoa salad

Serves 4
2 cups of cauliflower finely chopped
1 cup cooked quinoa
4 spring onion, use the white and green finely chopped
2 garlic clove crushed
zest from one lemon
1 cup of fresh basil finely chopped
4 eggs
4 tbsp almond flour
Himalayan salt and pepper

Mix all the ingredients in a big bowl. After fry them on a non-sticky pan with olive oil. Use a table spoon to scoop up the mixture and place them on the hot pan and cook for a few minutes on each side.

2 cups of quinoa
1 cup of fresh parsley chopped
1 avocado cut in small pieces
1/2 a cup of fresh chives chopped
20 cherry tomatoes
8 mint leaves finely chopped
Himalayan salt and pepper after taste
Juice from 1/2 a lemon
2 tbsp olive oil

First cook your quinoa, when cooked place them in a medium size bowl to cool off. Then cut your cherry tomatoes, first cut them in half to remove the seeds, after cut them into smaller pieces. Place them in a bowl with the avocado and the chopped parsley, chives and mint leaves. Then pour the quinoa into the bowl and add salt, pepper, lemon juice, olive oil and mix it together and serve.
